If you are health conscious and need a vegetable salad for weight loss, this is a perfect recipe. This recipe is so easy to make. Just chop the raw veggies. Boil the sweet corn and white black eyed beans. This salad is mixed with salad dressing, a sauce containing various ingredients like Tahini, Olive oil, Honey, Lemon juice / vinegar, Salt and Black pepper.
Ingredients You Need
Vegetables : Cucumber, Carrot, Tomato and Cabbage. These are packed with many nutritional values. Once you chop the cabbage, wash and drain it.




Apple : Apple provides a sweet texture to the salad. It is packed with high fibre and antioxidants which helps in digestion and weight loss.

Sweet Corn : It enhances the texture and flavour of the salad. It is very good for your heart health, eye health and skin.

Black Eyed White Beans : It provides a nutty flavour to the salad. It is a good source of protein.

Oil : Here, I used extra virgin olive oil. Oil is totally optional. if you don’t like it’s taste you can skip it. You can also use avocado oil, sesame oil or flaxseed oil.
Tahini : It is the base for the dressing. Use creamy, runny tahini for a creamy dressing.
Lemon Juice : It makes the dressing nice and tasty.
Salt : To balance the flavour.
Black Pepper : To spice the salad.
Honey : To give a sweet texture to the salad. It is optional.

Ingredients
3/4 cup cucumber ( 1 medium)
1 cup carrot ( 1 large, grated or chopped )
1/4 cup tomato ( 1 medium )
3/4 cup cabbage ( shredded)
1/2 cup sweet corn ( boiled )
3/4 cup white beans ( boiled )
1/2 cup apple ( 1 small diced)
- FOR SALAD DRESSING
1/8 teaspoon salt ( or as per your taste )
1 tablespoon lemon juice ( or apple cider vinegar )
1 teaspoon black pepper
1.5 tablespoon tahini
1 tablespoon extra virgin olive oil ( or avocado oil or flaxseed oil )
1 tablespoon honey
INSTRUCTIONS
- Soak the white beans overnight. Once it is soaked, put it in the pressure cooker with salt and water for about 1 whistle. Once it cools down, drain the water completely.
- Boil the sweet corn for about 2 or 3 minutes. Drain them completely.
- Wash all the vegetables and fruits with the running water. Wipe them with a clean towel.
- You should shred the cabbage and only rinse it thoroughly. Strain it and set aside to drain.
- Peel and chop the other vegetables and cut them into small pieces. Grate the carrot. Add all of them to a large serving bowl.
- Now add the sweet corn and white beans.
- Mix tahini, olive oil, salt, black pepper, honey and lemon juice separately in a bowl.
- Mix all of the above and serve.
Notes
- Wash the cabbage thoroughly only after shredding. Because if there is any germs you can discard them easily.
